Green foods – isothiocyanates- strong anti-cancerous properties, lutein & zeaxanthin- helps protect the eyes from damage and help reduce risk of developing cataracts.
Purple foods – anthocyanidin- anti-aging effects, support healthy blood pressure, provides protections against pain and inflammation.
Red foods – lycopene- protects cells, helping in the prevention of heart disease, helps protect the skin from sun damage, protects against certain cancers.
Orange – beta-carotene- enhances immune system, essential for vision, skin, bone health.
Yellow – beta-carotene- enhances immune system, essential for vision, skin, bone health , hesperitin- acts as anti-inflammatory.

Recipe:
2 handfuls of mixed salad
2 handfuls of chopped red cabbage
2 carrots
½ of red sweet pepper
2 small orange or yellow peppers
7 red cheery cherry tomatoes
7 yellow cheery cherry tomatoes
2 tablespoons of chopped roasted walnuts
4-6 slices of roasted chilli halloumi cheese
1 tablespoon of avocado oil or olive oil
1 tablespoon of balsamic vinegar
1 teaspoon of honey- optional
Fresh grounded black pepper
Pinch of salt
- Heat two pans. On the one pan roast walnuts- till golden brown. On the other pan grill slices of halloumi- on both sides.
- Chop red cabbage, peppers and tomatoes. Peel and cut the carrots longwise. Mix all ingredients with salad leaves.
- Top up with grilled halloumi slices, sprinkle with roasted walnuts and a dash of avocado oil & balsamic vinegar.
- Add a pinch of salt and fresh grounded black pepper.
